Procrastination

I have been meaning to do this blog post since the day after I did the last one, hence the name. Between being sick, going away and planning an overseas trip I just haven't really been on the computer much at all.

I have a recipe for a really awesome, easy, yummy, quick dessert that my friend Stacey made for us while we were away. She got the recipe from www.thefoodnetwork.com.

Lemon Pudding:
Serves 4
Ingredients:
3/4 cups sugar
1/4 cup cornstarch
3 large egg yolks, lightly beaten
2 tablespoons finely grated lemon zest
pinch of salt
1/2 cup fresh lemon juice
2 tablespoons unsalted butter

Directions:
Whisk the sugar and the cornstarch together in a saucepan. Add the milk and whisk until smooth. Add the egg yolks, salt and zest and cook over medium heat, stirring frequently at first then constantly at the end. Do this until the mixture is  thickened enough to coat the back of a spoon. 
Remove the pan from the heat and stir in the lemon juice and butter. Pour through a strainer into a large serving bowl or 4 individual serving dishes.
Let cool to room temperature. Chill, loosely covered, for at least 2 hours and up to 3 days, or until set and thoroughly chilled. Serve chilled.
We ate ours out of wine glasses. Unfortunately, I didn't take a photo so here is the one that came with the recipe.

Yes! I cook!


Last night I decided that I would help Kit with dinner so I made a Green Ratatouille. I have made it before and knew it would be good. I thought I would share it with all of you. I got the recipe from my Bill Granger: Holidays book (I use this book a lot). 

Here are the in(green)ients *hehe*:
  • celery   
  • green peppers 
  • courgette (or zucchini)
  • white onion
  • green beans (the recipe didn't call for these but I included them because I had them in my fridge)
  • garlic  
  • fresh thyme 
  • olive oil  
 

Look what I found in my green pepper (poor little guy)
 Dice all the ingredients and then chuck them into an oven dish add salt, freshly ground black pepper and your fresh thyme (finely chopped). Cover it with foil and cook for 40 minutes on 200 C.

The recipe says to pan fry the courgettes in the olive oil for about 5 or 6 minutes and then add the onion, garlic, green peppers and celery to them and fry for another 6 or 7 minutes. I did this the first time I made this and thought it was a waste of time so this time I just put the ingredients into the oven for a bit longer so that they could cook.

 We had fish with ours. It was delicious!

TV-holic

So, with all the new TV shows that started in The US over the last few weeks I have been watching WAY too much TV. There is one show that I suggest you all watch: New Girl. It is really funny. It has Zooey Deschanel in it, and I love her.
